Step 1 – Shred the Brussels sprouts.
Start by trimming the stems off each Brussels sprout. Throw the sprouts into your food processor and grate. Once they’re at your desired consistency you can set the Brussels sprouts aside.

Step 2 – Start to cook the juicy skillet pork chops.
Add salt and pepper to both sides of the pork chops. Heat a few tablespoons of olive oil over medium-high heat. Once the pan is hot, add the pork chops. Cook the pork chops for 4 minutes on each side to brown them, and then if needed, add a lid and cook them until they are done. I recommend using a digital meat thermometer to check that the internal temperature is at least 145 degrees.
Step 3 – Sauté the brussels sprouts.
While the juicy skillet pork chops are cooking, warm 1/4 cup of olive oil over medium-high heat. Add the shredded Brussels sprouts and sauté until softened and lightly browned, about 10 minutes. Add more olive oil as needed. Season with salt and pepper to taste.

Pork Chops With Shredded Brussels Sprouts
Equipment
- 1 food processor
- 2 skillet pans
Ingredients
- 1 lb Brussels sprouts
- 1/2 cup olive oil
- 2 thin pork chops
- salt and pepper to taste

- Trim the bottom stem off each Brussels sprout. Grate the sprouts in the food processor. Set aside.
- Lightly salt and pepper the pork chops. Over medium-high heat, heat a few tablespoons of olive oil, waiting until the pan is nice and hot before adding chops. Cook the pork chops 4 minutes on each side to brown, then if needed add a lid and cook about 4 minutes more or until they reach desired doneness.
